Chef Jeff's Recipe for Pasta Caprese 3-10-08

Pasta Caprese
Serves 6

¼ Cup Extra Virgin Olive Oil
4 tsp Lemon Juice (fresh Squeezed)
1 Each Garlic Clove (minced)
1 Each Shallot (minced)
1 ½ Pound Tomatoes (Seeded, Pulped and diced)
12 Ounce Fresh Mozzarella (Diced)
1 Pound Pasta (penne or other)
¼ Cup Fresh Basil (chopped)
½ tsp Salt
¼ tsp Black Pepper
1 tsp Sugar

1. Whisk oil, 2 tsp lemon juice, garlic, shallot, ½ tsp salt,
and ¼ tsp pepper together in a large bowl. Add tomatoes,
toss and marinate for 30-45 minutes.
2. While tomatoes are marinating, cook pasta al dente.
Drain well.
3. Toss hot pasta and mozzarella with tomato mixture and
let stand 5 minutes.
4. Stir in Basil and adjust salt, pepper, lemon and sugar to taste.
Serve at once.
