Peppermint Cheesecake







Recipe By :Jeff Bacon
Serving Size : 32 Preparation Time : 2 ½ hours

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 1/2 pounds cream cheese -- Softened
1 1/4 Cups sugar
3/4 cup cream
2 each eggs
6 each yolk
1 teaspoon vanilla
1 teaspoon peppermint extract
2 drops red food coloring
4 ounces peppermint mints -- starbright mints (crushed) 1/2 bag
2 cups chocolate wafer cookies -- Nabisco Famous (crushed)
1/4 cup butter -- melted

FOR FILLING

Crush mints in food processor on pulse until in very small
pieces (BB size)

Bring cream to a simmer on stove. Add 1/2 of crushed mints and stir
until dissolved. Reserve remaining pieces for later.

Beat cheese and sugar together in mixer until smooth

Add vanilla and peppermint extract.

Remove 1 cup for later use

Add yolks, and eggs and mix

Remove half of this mixture leaving other half in mixer.

Add peppermint cream liquid to the half still in the mixer and
mix until blended. Add 2 drops red coloring until bright pink.

FOR CRUST

Nabisco Famous Chocolate Wafers can be found at some Lowe's
grocery stores in the ice cream topping section. If unavailable,
substitute Oreos and leaving out the melted butter.

Blend crumbs, and butter

Press into bottom of 9 inch spring form pan and
1/2 inch up sides.

ASSEMBLY

Pour pink batter into crust

Pour white batter into center of pink batter. Use a table knife to
pull pink batter into the center of the white batter from the outter
edge in a swirl motion. Make sure not to poke deep enough to disturb
the crust.

Sprinkle top with remaining crushed mints

Bake in steam bath at 350 for 1 hour or until middle is set.

Allow to cool at room temperature until room temperature then
refrigerate over night.

Pipe reserved frosting around perimeter of cooled cake in 16 rosettes
adding one in the center of cake.

Stand one chocolate cookie up in the center of each rosette
just prior to serving.

Garnish center rosette with a mint.

Extreme Makeover Coming to the Triad!

Lexington, N.C., October 23, 2009 – An exciting announcement will be made during Lexington’s Annual Barbecue Festival opening ceremonies on Saturday, Extreme Makeover: Home Edition, the Emmy-award winning hit TV show on ABC Television, is coming to the Triad to present one deserving family with an extreme home makeover. Lexington builder, Hedrick Creative Building, with a goal to construct a new home in one week, will oversee and implement the project that will make a miracle happen for a Triad family.

On Wednesday, November 11, a Triad family will answer a knock on the door and find Extreme Makeover: Home Edition Team Leader Ty Pennington and his design team waiting to transform their home and their lives. Five families in the Triad have been nominated by their friends and families to receive the home makeover in recognition of their general day to day heroism.

“It’s such a great honor to be a part of something that makes such a difference in the life of a Triad family,” said Jason Hedrick, owner of Hedrick Creative Building. “The community is coming together to make this possible, it’s such a feel good project to give back and make a dream come true, that’s why I’ve chosen Let’s Build a Dream as the theme for this build.”
“We’ll be building this home to the National Association Homebuilders Green Building Standards, so not only will we be building the dream home for a deserving family, we’ll be building it in a manner pleasing to the environment. We’re paying attention to energy efficiency, water and resource conservation, the use of sustainable or recycled products, and measures to project indoor air quality.”

Pep Rally

On Friday, November 6, at 8:00 am, a pep rally is planned for all constructions volunteers and subcontractors of the Extreme Makeover: Home Edition Triad NC build at Reeds Baptist Church, 180 Reeds Baptist Church Road in the Reeds Community in Lexington.

“This pep rally will be an informational as well as inspirational day for all attending,” said Hedrick Creative Building’s owner, Jason Hedrick. “So many have already signed up as partners for the project through material and monetary donations and volunteers for the build and this will be the day to rally us all as one.”

The show’s executive producer, Conrad Ricketts will be attending and providing information about what’s happening with the project for general and skilled volunteers, subs and trades. All media are welcomed and invited to join the excitement of the rally.

For anyone interested in signing up as a volunteer, there are still ways to participate. Watch in the newspapers, on the radio, and on TV for announcements for people needed to cheer on and support all the volunteers and people on Extreme Makeover: Home Edition. My Birthday Wish

My 37th birthday is right around the corner. Since I am adopted, my birthday is an annual reminder of just how blessed I am to have a caring birthmother who gave me the gift of life and gave my parents the gift of a child, and two loving adoptive parents who gave me the gift of a loving home and a permanent family. I also thank God who, I am certain, orchestrated the whole thing.

This year I'm celebrating my birthday by asking friends and family to consider making a small financial contribution to Caroline's Promise. CP is an organization that works to"Reclaim Hope for Orphans" by:

-providing grants for adoptive families
-serving orphans, widows and at risk children on short-term mission trips, and
-educating the community about adoption and the orphan crisis

I have served on two Caroline's Promise mission teams to Guatemala and I also serve on the CP board of directors. I have seen, first-hand, the lives that are being changed because of the work being done by Caroline's Promise.

"The Katinas" and Samoan Tsunami Relief

Verne and I talked with James Katina (one of the brothers from the
group Katinas) The Katinas still have family that still live in American
Samoa. The island was hit by an 8.0 magnitude earthquake Tuesday
that then triggered a ‘tsunami’ that brought in two waves of water that
devastated whole villages. The death toll is over 100 people and is
expected to climb.

American Samoa (home to 65,000 people) is located about
halfway between New Zealand and Hawaii in the Pacific.
