Cookin' with Bacon

Sautéed Shrimp Scampi

1 pound medium shrimp -- peeled and de-veined
1 pound pasta --cooked
6 ounces butter
4 tablespoons white wine
4 tablespoons lemon juice -- freshly squeezed
4 tablespoons chicken broth
3 tablespoons parmesan cheese -- grated
2 tablespoons scallion -- chopped
1 tablespoon garlic -- minced
1 tablespoon fresh parsley -- chopped fine
1/2 teaspoon salt
1/2 teaspoon coarsely ground pepper

Sauté Shrimp in 1 ounce of the butter utill half cooked

Add garlic and sauté 30 more seconds

Add wine lemon and broth simmer until reduced by half

Add parsley scallion, salt, and pepper.

Reduce heat to very low and swirl in remaining butter until sauce thickens and is smooth

Toss with pasta

Yield:
"2 pounds"
