This was my first attempt at making anything with Achiote Paste (available at many Mexican grocery stores). They came out pretty good! If you want to take a stab at it, here's the recipe I (mostly) followed.
Ingredients:
2 pork chops
½ onion, chopped
1 clove garlic
2 tablespoons achiote paste
1 can ancho-chilies (I did not use these because of the heat)
1 orange, juiced
½ cup olive oil
Salt and pepper to taste
Directions:
1. For pork chop marinade, blend onion, garlic, achiote paste, ancho-chiles, orange juice, olive oil, salt, and pepper until smooth. Marinate pork chop for a minimum of 30 minutes (maximum 6 hours).
2. Grill or pan fry pork chops to medium rare. Let rest 10-15 mins. before serving.
