Extreme Makeover Home Edition Casting Call
Do you know a family whose home deserves an Extreme Makeover? If so, the
producers of ABC’s Extreme Makeover: Home Edition want to hear from you.
Ty Pennington and his crew have been all across the map and now they want to drive that famous bus to North Carolina!
“We are looking for the deserving people and inspiring families that America can reallyroot for,” says Casting Supervisor Morgan Fahey.
What does it take to be picked for an Extreme Makeover? "We're looking for those special people who have amazing strength of character and never give up. Whether it’s keeping their chin up in really tough circumstances or going out of their way to help others. We want to help people whose stories have really affected their community or made a big difference in other people's lives.” Fahey added: "There are a lot of people who are heroes to those around them because of the way they inspire others and quietly serve their communities on a daily basis."
The Extreme Makeover: Home Edition producers are looking for families whose homes desperately need to be rebuilt. “We really want to help families whose homes present major problems for the family, those big issues that affect the family's quality of life on a
daily basis. We want to find deserving people who just don't have the resources, ability, or time to fix those serious issues without our help.”
To be eligible, a family must own their own single family home and be able to show producers how a makeover will make a huge difference in their lives.

Nominations may be submitted by the family or by a member of their community. Each nomination must include the names and ages of every member of the household along with a description of the major challenges within the home. Anyone submitting a nomination should be sure to explain why the nominated family is deserving, heroic, and/or a great role model for their community. If possible, include a recent photo of the family. All nominations must include a contact phone number.
The deadline for nominations is August 7, 2009. Don’t delay!

Cookin' With Bacon
Fresh Mozzarella and Summer Strawberry Salad with
Honey Balsamic Dressing
Recipe By : Jeff Bacon CEC CCA AAC
Serving Size : 4
Amount Measure Ingredient -- Preparation Method

8 ounces baby lettuce leaves
8 ounces tomato -- heirloom golden
8 ounces tomato -- red ripe
8 ounces cucumber -- peeled
1 pound mozzarella cheese -- fresh
4 ounces yellow bell pepper -- diced
4 ounces walnut -- chopped
1 pound strawberries -- sliced
4 slices French bread -- sliced thin
2 ounces parmesan cheese -- shredded
1 tablespoon olive oil
6 ounces Honey Balsamic Dressing
Wash and dry lettuces
Slice Mozzarella and then cut into dice
about 1/4 inch square
Peel cucumbers then split in half. Seed and slice thin
Cut tomatoes into quarters then slice
Make dressing
Drizzle part of olive oil onto each of four bread slices
Sprinkle slices with cheese then toast until crisp
Combine all vegetable ingredients with nuts and
cheese in large bowl
Add appropriate amount of dressing and toss well
Plate salad and garnish with cheese toasts

8 ounces balsamic vinegar
4 ounces honey
2 each garlic clove -- minced
2 ounces fresh basil
2 tablespoons dijon mustard
1 each shallot -- minced
1/2 teaspoon salt
1/4 teaspoon black pepper
6 ounces extra virgin olive oil
6 ounces canola oil
Add all ingredients except oils and basil into a
large bowl food processor
Process on medium or high
Add oil while processor is spinning until oil reaches
desired consistency (all oil may not be necessary)
Add basil and chill
Yield:
"24 ounces"

Leaders say they're in a crisis situation because shelves at the food bank are nearly empty.
Second Harvest supplies food to 400 non-profit organizations in Alamance, Alexander, Alleghany, Ashe, Caldwell, Caswell, Davidson, Davie, Forsyth, Guilford, Iredell, Randolph, Rockingham, Surry, Stokes, Watauga, Wilkes and Yadkin Counties.
During the past 12 months, the organizations have distributed food to 8.9 million people.

Fourth on the 2nd with the Dash!

Winston-Salem Dash Baseball is about family fun, affordable entertainment and enjoying a night at the ballpark as a community. Oh, and if you haven't heard, our team is in first place and playing great baseball! These attributes are on full display every night at the ballpark, but when our schedule was released, I circled July 2nd on my calendar as a special date.
I circled that date because the Winston-Salem Dash are at home and it gives us the opportunity to kick off the holiday weekend with a bang! Thousands of families have enjoyed the 4th of July at the ballpark the past few seasons, but unfortunately the team will be on the road this year. We wanted to do everything possible to inform the community of the date change and update you on our holiday festivities.
A COMMUNITY CELEBRATION
We figured why wait to start having fun! We'll kick off the Independence Day weekend celebration on Thursday, July 2nd, with a fantastic community fireworks show, presented by our fabulous partner, WilcoHess. Plus, we have made it very affordable for families to attend. We've reduced the price of all tickets ordered in advance to $5. This will allow a family of four a savings of $16 for our best seats, right behind home plate.

Summer Feeding Programs
In 2009, Second Harvest Food Bank of Northwest NC joined forces with the City of Winston-Salem and the Winston-Salem/Forsyth County School System to feed children throughout the summer months in Forsyth County.
The 2009 program will begin on June 22 and run through August 14, providing meals free of charge for children ages 0-18 at 23 sites in Forsyth County. Breakfast (8:15am- 8:45am) and lunch (11:30am-12:30pm) will be provided at the following sites:

The food van will deliver lunch at the following bus stops: 118 Dedmond Ct., 10:50 - 11:05 a.m. 40 Hunter St., 11:10 - 11:30 a.m. College St. and Ingram St., 11:35 - 11:50 a.m. Memorial Park and Leonard St., 11:55 a.m. - 12:10 p.m. Douglas Drive and Cohen St., 12:15 - 12:30 p.m. Polk and Dillion streets, 12:35 - 12:50 p.m. Warner and Taylor streets, 1 - 1:10 p.m.
The following schools will open their cafeterias for students to participate in the program: Thomasville Primary School and Thomasville High School.

Getting Fit with Allen Branch
-Eat for Fuel not Fun: Food can be fun, there is no doubt. We center celebrations, quality time with friends and family and plenty of other occasions around eating. However, it's easy to lose sight of the fact that food is primarily supposed to be fuel. It's important to start each day with the right foods or "fuel". It's also important not to overeat at dinner and right before bed, when we won't have a chance to burn what we've eaten. Allen suggests fruits and veggies as excellent food choices to keep your tank full throughout the day.
-Squat Properly! Squats are a crucial element of a throrough workout. However, form is important and lots of us do them incorrectly. -Food choices and portion sizes are important. The USDA food pyramid is a good guide to food groups and portion sizes. www.mypyramid.gov. Use an online food tracker like www.livestrong.com or to keep up with your intake. There are also some really good apps for food tracking on your iPhone or iPod touch.
-Find an activity you like so that you will stick with it.
- Everyone needs to do some type of strength training. A basic routine includes: a squat (i.e. lunge), a push (ie a push up), a pull (i.e. pull up), a core exercise (like a plank), some sort of trunk rotation movement, and also a cardio like running or walking and also.
-Intervals--Very important. For example, if you walk a mile, carry a stopwatch with you and every minute, jog for 15 seconds.

3 tablespoons flour
3 tablespoons corn starch
3 each roma tomato -- sliced 1/4" thick
1 pound mozzarella cheese -- fresh in ball
2 each lemon
3 each bread slices -- thick italian
1 tablespoon fresh basil -- julienne
6 tablespoons Alfredo sauce
6 tablespoons balsamic Glaze
1 teaspoon parsley -- chopped
3 pinches salt and pepper -- to taste
2 teaspoons extra-virgin olive oil
1 cup canola oil -- for frying
1/2 teaspoon sugar
Slice tomatoes add salt and pepper and basil
Slice mozzarella, use cutter to make perfect rounds about
the same size as the tomato slices
Cut bread into same size rounds and drizzle with
olive oil and toast lightly
Make Alfredo or use pre-made
Make Balsamic Glaze or use bottled
Stack Napoleons bread first then tomato then cheese,
repeat until each stack is three layers high.
Align so that the stacks are very straight.
Peel and de-vein prawns (large shrimp)
Mix flour and corn starch together and add a
pinch of salt and pepper
Dust prawns in flour starch mix and then heat canola
or peanut oil for frying to 350 F.
Peel lemon and cut segments out of membrane.
Chop lemon segments.
Add a pinch of salt and pepper and the sugar to segments
Add parsley to segments just before service
Fry shrimp 3-4 minutes. Remove to a blotter
While shrimp are frying, top each stack with
1 TBSP of Alfredo and place stacks on a pan
and bake at 400 for about 5-8 minutes
Place baked stacks on a medium white plate and top
with one shrimp.
Place 1/2 - 1 tsp of lemon segment mixture on top of each stack
Drizzle with balsamic glaze, making some decorative swirls
on plate as you do so.
NOTES : you will need a round cutter like a biscuit cutter that is
similar in diameter to your roma tomatoes

FIR SURE: A Russian man has had a 5cm fir tree removed from one of his lungs.
A Russian man who was being operated on for a suspected tumour ended up having a fir tree removed from one of his lungs. The 5cm tree, was discovered by surgeons when they opened up Artyom Sidorkin, 28, according to Russian newspaper Komsomolskaya Gazeta.
He went to doctors complaining of extreme chest pain and coughing up blood.

1 1/4 pounds Pinto beans -- rinsed
3/4 pound onion -- diced small
1 tablespoon vegetable oil -- or margarine
3/4 pound bell pepper -- diced small
1/4 pound chili peppers -- diced fine
2 pounds ham -- diced
1 quart tomato puree
1 quart ketchup
1 gallon water
1/4 cup chicken bouillon
1 tablespoon garlic -- minced
1 tablespoon cajun seasoning
2 tablespoons hot sauce
1 tablespoon black pepper
Sort beans for impurities then soak overnight
Place beans, water, bouillon, onions, garlic, and black pepper in
kettle and bring to a boil. Place ham bones in with beans if
there are some.
Simmer one hour or until beans are done yet still firm. Remove bones.
In a large pan or braiser sweat bell peppers and chili peppers
together in oil.
Add peppers, tomatoes, ketchup, cajun seasoning, diced ham and
hot sauce to soup.
Simmer 20-40 more minutes
Cool to below 70 farenhite within 2 hours then to below 41 with in
4 more hours and store at 41 or below.
Alternate - Cool to 35 within 3 hours and store at 33-36 Fahrenheit
for cook chill process.

Creative Mission Trip Fundraisers
-Pie in the Eye Auction- Auction off whipped-cream pies to your church congregation. The winning bidder gets to give your minister, youth minister, etc. a face full of whipped cream pie.
-Yard Sale/Ebay- Have your child go through his room and sell stuff at a yard sale or on ebay. My family is having a yard sale next month and Andrew is going to set up a refreshment table to raise money.
-Flower Grams-Work with a local florist to buy carnations at a discount. Then offer flower-grams at your church on Mother's Day.
-Book it- Ask friends and family members submit their recipes and compile a cookbook which you can then sell for donations. You could also create poetry books, calendars, compile art work into a book...be creative! You can have the books printed and bound pretty cheaply at kinkos or the UPS store.
-Get to Work- Depending on your childs age, she can babysit, wash cars, clean houses, mow lawns or help with other odd jobs in exchange for a donation towards their trip.

WASHINGTON, D.C. The Obama administration is considering drastic measures to reduce American dependence on foreign oil and clean up the environment. White House Press Secretary, Robert Gibbs announced yesterday that the president is closely looking at the possibility of only allowing Americans to operate their vehicles every other day, similar to the tactic used by Beijing officials prior to the '08 Olympics.
If approved, the plan would likely work this way: automobiles with license plates ending in the numbers 0-4 or the letters A-M would be permitted to operate on Monday, Wednesday and Friday: the numbers 5-9, or letters N-Z would be allowed on the road on Tuesday, Thursday or Saturday. Nobody will be permitted to drive on Sunday.
President Obama says he will use his executive powers to their fullest extent to ensure this law is enacted as soon as possible, possibly as soon as this summer.

GRAND RAPIDS, Mich. - The staff dietitian at a doctors group says a minor-league baseball team in Grand Rapids, Mich., should warn fans that a 4,800-calorie burger it plans to sell is bad for them.
Susan Levin of the Washington-based Physicians Committee for Responsible Medicine sent a letter to the West Michigan Whitecaps on Tuesday. She wants the enormous burger to be labeled a "dietary disaster" that increases the risk of cancer and heart disease.
The 4-pound, $20 burger features five beef patties, five slices of cheese, nearly a cup of chili and liberal doses of salsa and corn chips - all on an 8-inch bun.
Whitecaps spokesman Mickey Graham says the team hasn't considered labeling the burger, which he says is a gimmick being promoted as a very unhealthy menu item

Fargo, N.D.-Jimmy K. Shorts of Fargo, ND is ‘cashing in’ on the latest natural disaster. Even before the flood waters started to rise along the Red River, Shorts had the bright idea of trucking in 100 tons of playground sand and dumping it on his property…then selling it to local townspeople…that in turn would be used in make-shift sand bags. Thousands of sand bags were then placed along flood prone areas along the Red River.
State officials are not very happy. Shorts is now facing price gouging and racketeering charges for profiting during a federal State of Emergency. Shorts could face up to 10 years behind bars.

1 cup orange juice from blood orange
1/3 cup raspberry vinegar
2 tablespoons shallot -- minced
1/4 cup butter cut in 1/4" pieces
1 dash salt --to taste
1 dash pepper -- to taste
Reduce shallot orange juice and vinegar in pan until it starts to thicken (it should reduce down to about 1/4 cup)
Swirl in butter off of the heat a few pieces at a time until it is all incorporated
Season to taste with salt and pepper

Pat Scallops dry
Mix together salt, pepper and ginger. Season scallops on both sides
Dust top and bottom of scallop with corn starch
Heat oil in pan until very hot
Sear Scallops in pan about 1 1/2 to 2 minutes per side.
Remove to blotter and serve with blood orange sauce (recipe seperate)
Garnish with orange zest and fresh mint

Kid Concoctions

Sample Kid Concoction:
Grass-Head Guy
Materials:
Knee-high nylon stocking
2 Tbs. grass seed
Empty yogurt container
1 cup potting soil
WaterMeasuring cup
Wiggly eyes
Glue
Pompon
Yarn
Acrylic paint or paint pens
Fill the toe of a knee-high nylon stocking with 2 tablespoons grass seed.
Pour in 1 cup potting soil. Gather the top of the stocking, and hold it with one hand. Press the outside of the stocking down, forcing the potting soil into a ball. Tie the stocking in a knot at the top of the ball. There will be a tail above the knot.
Turn the ball upside down, and place it tail first into a yogurt container filled with water. The tail will draw the water up into the soil and water the seed.
Glue wiggly eyes, a pompon nose and a yarn mouth onto the nylon-stocking ball. Paint a shirt and tie on the yogurt container with acrylic paint or marking pens.
Keep the yogurt container filled with water, and watch the grass grow. When the grass-head guy's hair grows too long, cut it with scissors.

Corned Beef and Cabbage
Corned Beef and Cabbage I
Ingredients:
3 pounds corned beef brisket with spice
packet
10 small red potatoes
5 carrots, peeled and julienned
1 large head cabbage, cut into small wedges
Beer (optional)
Directions:
1. Place corned beef in large pot or Dutch oven and cover with water and/or beer (I use Guiness Stout becuse it's Irish, but really any beer will do) . Add the spice packet that came with the corned beef. Cover pot and bring to a boil, then reduce to a simmer. Simmer approximately 50 minutes per pound or until tender.
2. Add whole potatoes and carrots, and cook until the vegetables are almost tender. Add cabbage and cook for 15 more minutes. Remove meat and let rest 15 minutes.
3. Place vegetables in a bowl and add as much broth (cooking liquid reserved in the Dutch oven or large pot) as you want. Slice meat across the grain.
Optional Glaze...
Remove Corned Beef from pot after about 2 1/2 hours (when you put the veggies in). Place beef in casserole dish. Combine on the stove until smooth: 1/3 cup of brown sugar, 2 tblsp of butter, 2 tlbs. of prepared mustard, 1/3 cup of ketchup, 3 tblsp of apple cider vinegar and 2 Tbsp. Whiskey. Combine these ingredients till smooth, then pour over the brisket while the veggies are cooking in pot. 30 to 40 mins. at 350 will do it.

Cookin' with Bacon-Cara Cara Orange Salad with Fennel Vinaigrette, Pine nut, Ricotta Salata and Mint
Serving Size : 6 Preparation Time :0:00
3 oranges -- cara cara variety
2 tablespoons mint -- thin julienne
2 tablespoons basil -- thin julienne
1 ounce ricotta cheese --salata variety – shaved
1 1/2 tablespoons white wine vinegar
4 tablespoons extra virgin olive oil
1 teaspoon sugar
2 tablespoons fennel bulb --finely minced
2 tablespoons pine nuts – toasted
1 dash salt – to taste
1 pinch white pepper -- to taste
Mix vinegar sugar, and fennel in small bowl
Whisk in 3 TB of the olive oil to form an emulsion
Season dressing with salt and pepper and allow to sit at least one hour
Peel Skin from oranges with sharp serrated knife being careful to remove all pith
Slice each orange into 8 thin slices
Place orange slices in dressing to coat
Arrange 4 slices on a salad plate and spoon any reserve dressing especially any fennel pieces on top.
Sprinkle lightly with basil and mint
Top each salad with a teaspoon or so of pine nuts and 4 or 5 shavings of Ricotta
Drizzle each salad with a small amount of olive oil.
Yield:

The Chernobyl nuclear accident which occured on April 26, 1986 continues to affect the children of Belarus. Each summer, the American Belarussian Relief Organization (ABRO) brings children from Belarus to America. The children arrive with suppressed immune systems due to the contaminated regions in which they live. Host families throughout America open their homes and hearts to these precious children for 6 weeks each summer. The children receive medical, dental and eye care; clothing; and love in caring homes during their visit. They return to Belarus with a renewed hope and an extension on life. (It is suggested that a 6 week rest from the radiation extends a child's life by one year.)
ABRO Winston Salem is located in central North Carolina. Our focus is to minister to the physical, emotional and spiritual needs of these children. It is our desire to be involved in helping the children of Belarus as a Christian humanitarian group associated with ABRO of North Carolina. American Culinary Federation Triad Chapter North Carolina (ACF Triad Chapter NC)
The ACF Presidents Grand Ball is an area wide gathering of professionals in, and aficionados of the Culinary Arts. It is held in various venues throughout the Triad to raise money for the Triad Community Kitchen, a program of the Second Harvest Food Bank of NWNC that will offer job training to the chronically unemployed as well as prepare nourishing food products for member agencies that serve the less advantaged in our community. Money from this event also goes to the “Chef and Child” foundation, a not for profit branch of the ACF that fights childhood hunger through education, grants and crisis intervention programs; and to culinary programs at Guilford Technical Community College.
This year’s event will be at the Embassy Suites Hotel, Greensboro at 6:30 on Sunday, March 1st. Tickets are $60 per person, $100 per couple, or $400 for a table of ten. The ACF Triad Chapter’s Presidents Ball has raised over $125,000 toward this goal since it’s inception in the early 1990’s. If you love great food you cannot afford to miss this event. Grilled Chicken Pasta with Vodka Sauce

1 1/4 pounds chicken breasts, no skin, no bone, R-T-C -- Grilled
1 dash salt and pepper – to taste
1 tablespoon olive oil
1 cup Onion -- julienned
1/2 cup Red bell pepper -- julienned
1 teaspoon garlic --minced
1 cup vodka
1 1/2 cups alfredo sauce
1 1/2 cups marinara sauce
1/2 cup parmesan cheese – shredded
1 pound pasta -- cooked
Season chicken breasts and grill until done. Allow to cool slightly then cube
Heat a large skillet and add oil
Sauté onions and peppers together for 4 minutes then add garlic
and continue to sauté for one more minute
Add vodka away from flame then return to burner taking caution
for vapors to ignite (if using electric you will need to light fumes to ignite them)
Once flames die down reduce vodka by half
Add alfredo and marinara and simmer 4 minutes
Toss chicken and cooked pasta into sauce
Serve on to plates or pasta bowls and garnish with shredded parmesan cheese

Caroline's Promise is Looking for a Few Good Men
Here is some more info about the trip.
July 10 - 18, 2009: We will have 2 teams this week. Our construction team will spend most of their time on a project at the children’s home. They will participate in worship services, interact with the kids at the home if they want and participate in at least one community outreach project.
Our general team will consist of men & women ages 18 and up. Projects will be similar to the general team from the first week. If there are couples who want to serve together - this week would be ideal. The men could be a part of the construction team and the women join the general team. Teams will be housed together and enjoy meals & fellowship.
Estimated trip cost is $1600 (depending on airfare) and will include everything except personal spending money. A deposit of $100 is due immediately. All team members are expected to attend monthly meetings and a 1/2 day cross cultural training.
Young Artists Wanted!!
Prior to the Wee-Care Cereal Drive kick-off, students in Kernersville daycares, preschools and elementary schools can participate in the Wee Care! Art Contest by drawing a picture to illustrate the theme of “breakfast” or to create a three-dimensional cereal box. A “celebrity” panel of judges will be asked to choose the winning artwork which will appear on the Wee Care! poster and promotional materials.
Wee Care is a program to educate pre-school and elementary school age children about nutrition and helping those less fortunate in our community.
Artwork will be accepted and prizes given in 5 categories depicting the theme of "breakfast". Drawings should be no larger than 12" x 18" and one submission per child.

One BEST of SHOW winner will be selected for use on promotional materials, and receive a free birthday party at the Kernersville YMCA.
All work will be exhibited at an Art Show at Kernersville Wesleyan Family Life Center, 901 N Main Street, on Saturday, February 21, from 8 am - noon.

First, second and third place prizes will be given in five categories: preschool, kindergarten, 1st & 2nd grades, 3rd – 5th grades (cereal box) and digital photo.

The community is invited to attend the Art Show and Pancake Breakfast on Saturday, February 21, from 8 am - noon at Kernersville Wesleyan Family Life Center, 901 N. Main Street. Tickets to the Pancake Breakfast are $4/each and are available at Crisis Control Ministry, 431 W. Bodenhamer, Kernersville or at the event. The Art Show is free.

Chef Jeff--Round and Browned

4 pounds pork loin, center, R-T-C --Trimmed,
butterflied and pounded
8 ounces parmesan cheese –shredded
4 ounces bread crumbs, seasoned
4 ounces parmesan cheese --grated
8 ounces mozzarella cheese -- shredded
8 ounces pancetta -- sliced thin
8 ounces prosciutto -- sliced thin
2 tablespoons fresh sage -- chopped
2 teaspoons kosher salt
2 teaspoons freshly ground black pepper
4 each eggs
1 cup water
2 cups flour
1 cup vegetable oil
Trim loin of all silver skin and butterfly from side and lay out flat.
Continue to butterfly each half of the split loin again until you have
a roughly square piece of meat 12"x12" and 3/4" thick.
Cover loin square with plastic wrap and pound out with mallet until
thickness is even being careful not to tear any holes. Final thickness
should be slightly less than 1/2 inch.
Season top side of meat with some of thesalt and pepper
Cook thinly sliced pancetta and prosciutto in oven until almost crisp.
Sprinkle top of meat with shredded parmesan, mozzarella and sage
Evenly distribute crisp hams on top of cheese layer.
Roll loin tightly into a roulade. (Note you may wish to tie loin off with
twine at this point and it is fine to do so but is difficult
and messy to remove later.)
Set up a breading station with flour in one long pan,
the water and eggs (mixed) in the next, and the bread
crumbs and grated parmesan in another.
Dredge roulade carefully in flour then transfer to egg wash
then into crumbs. Be careful not to let roulade fall apart and
use care to seal up ends with breading.
Heat oil in a large roasting pan or rondeau. Brown off roulade
on all sides and transfer to a baking sheet
Roast slowly at 300 F until internal temperature reaches 145 F.
Allow to rest at least 15 minutes before carving.
